Baked Maddur Vada

Maddur vada is a popular evening snack from a place called Maddur near Mysore (Karnataka). I have tasted this when we were in Bangalore. It is a crunchy spicy deep fried snack l. I made this vada with rice flour, jowar flour, wheat flour, rawa, onions and some spices. Since I have been trying to be on a diet, I tried my hand at baking this dish. Maddur vada and masala tea is the best combo. It’s a good evening snack. It tastes the same as deep fried vadas. Let us see how to bake this snack.
Preparation time approx 40 minutes
Ingredients

  • 1/2 cup chiroti rawa or semolina
  • 1/2 cup jowar flour
  • 1/2 cup rice flour
  • 1/3 cup wheat flour
  • 1/4 cup chopped coriander leaves
  • 3 to 4 chopped green chillies
  • 2 big finely chopped onions
  • 1 tsp kashmiri chilli powder
  • 1/4 tsp asafotedia
  • 15 to 20 chopped curry leaves
  • Salt to taste
  • 1 tbsp oil
  • 2 tbsp yogurt or curd

Method

Dry roast semolina for 3 to 4 minutes. No need of changing colour. Keep aside. I have added green chillies now itself to make it spicy.

Dry fry jowar and rice flour together for 3 minutes on low flame. Keep aside

In a big bowl, add semolina, jowar, rice flour, wheat flour ,salt, red chilli powder, coriander leaves and mix well.

In a small pan heat the oil. Add green chillies and curry leaves. Fry for a few seconds then add asafotedia. Now add chopped onion. Saute till it is transperant.

Add this to the flour mix.

Add yogurt. Mix everything well.

Sprinkle little water and make a dough.

Keep the dough for 10 minutes.

Preheat the oven for 10 minutes. Apply some oil on the baking tray.
Divide the dough into equal big lemon sized portions.
In a plastic sheet or aluminum foil keep the round balls and spread the balls into round shape. Spread it thick and even.

Arrange the Vada’s in the baking tray. Bake at 180 degree for 25 minutes. Flip the vada’s and bake 5 more minutes.
