Cauliflower Masala Dosa
Masala dosa is one of the popular breakfast item of South India. Generally the masala is made with potatoes. I wanted to avoid potatoes in my breakfast as its known for high carbs. So this time, I replaced the potatoes with cauliflower. Its pretty easy to make and consumes the same amount of time, in fact it tastes better and the cauliflower soaks in all the flavours added.
Let’s look at the simple steps.
Ingredients 
  • 1 cup dosa batter
  • 1 tsp sugar
  • Ghee to smear on the dosa
For the masala
  • 2 cup cauliflower florets (wash and clean)
  • 1 big  or 2 small tomato
  • 2 medium size onions
  • 1 tsp Kashmiri chilly powder.
  • 1/2 tsp ginger garlic paste
  • Salt to taste
Method
In a pan heat little oil. Add little jeera. When it is fried add ginger garlic paste and saute.
Add finely  chopped onions. Let it turn little pink in color.
Then add chopped tomatoes. Saute till the tomatoes are mushy.
Add chilly powder and salt.
Now add the cauliflower pieces and mix well. Make sure it soaks up all the flavours.  Add few tea spoons of water to cook, close it with a lid. Let it cook for a few minutes.
The masala mixture should be dry. Make sure there is no water in the mixture. Mash the cauliflower in the masala and mix well.
Add chopped dhaniya for seasoning.
Keep aside the masala.
Heat a dosa pan. I always prefer iron or  hindalium
Rub little oil with a tissue paper.
Keep the stove in medium heat.
Mix the sugar and dosa batter very well. (The sugar is added for the crispiness of the dosa and the golden colour)
Pour a ladle full of batter to dosa pan spread it evenly as thin as possible. Smear ghee over the dosa. When it is roasted spread cauliflower masala over one side of dosa.

Close  the  dosa. Smear ghee once it is folded. Take out from dosa pan.
Serve with hot sambar or chutney.
