Uttapam is pretty much the staple tiffin item in a south Indian household.
It is very easy to make, healthy and also a lunchbox dish.We can use any vegetables for the topping.
The topping I made is with gun powder and dhaniya leaves.
It goes best with sambar or any kind of chutney.
Simple steps below:
- 1 cup idly batter. (Little sour)
- Chopped dhaniya leaves
- 3 tbsp gun powder or idli powder
5 cup idli (boiled) rice and 1 cup urad dhal soak plus 1 tsp methi seeds. Soak dhal and rice separately. Grind separately after soaking. Mix rice batter and urad batter nicely. Add salt.
Keep this batter for fermentation. I used wet grinder for grinding, you can make the batter in mixer also.
Heat a dosa pan (non-stick preferred). Dust with little oil.
Pour one ladle full of batter. Do not spread the batter like how you make normal dosas. Sprinkle dhaniya leaves and gun powder on top before it cooks.
Sprinkle very little oil.
Close it with a lid and let it cook.
Take out from pan and serve.
Please note: There is no need of flipping the dosa as only one side cooking is enough.
You any kind of topping for your uttapam like onions,carrots ,tomatoes, beans, cheese etc.
