Kothimbir Vadi or Coriander leaves Fritters

Kothimbir Vadi one of the most famous snack from Maharashtra. ‘Kothimbir’ means coriander in Marathi. Kothimbir vadi are coriander fritters made from lots of steamed coriander leaves mixed with besan and then deep fried for the crunchiness. Best if had with spicy green chutney or red garlic chutney.

Below is the step by step recipe with pictures. Do try it at home.

Preparation time approx 1 hour:

(5 minutes for mixing batter. 15 minutes for making dough. 40 to 45 minutes for deep frying approx)

Ingredients:

  • 1 cup chickpea flour (Besan)
  • 3 tbsp rice flour
  • 1 – 1.5 cups coriander leaves-chopped
  • 1/4 cup roasted and crushed peanuts
  • 1 tbsp sesame seeds
  • 2 green chillies
  • 3/4″ ginger- chopped
  • 1/4 tsp turmeric powder
  • 1/8 tsp garam masala powder
  • 1/2 tsp cumin powder is optional
  • 1/4 tsp red chili powder
  • a pinch of cooking Soda
  • 1 tbsp lemon juice
  • 1 tsp oil
  • Salt to taste
  • 1.5 to 2 cup water

Method:

Grind the green chillies and chopped ginger to a paste. Mix the besan powder, rice flour, coriander leaves, crushed peanuts, sesame seeds, ginger chilly paste, turmeric powder, garam masala, cumin powder, soda, red chilly powder, lemon juice, oil, salt and water.

Make a smooth batter without lumps.

Heat a nonstick pan. Add the batter. Cook stirring continuously. Let it become a thick dough.

Please note– you can steam cook the batter also instead of stirring.
Grease a plate.
Spread the dough in the greased plate and level it evenly.

Cut in to desired shape.

Heat oil in a pan.
Deep fry the pieces batch by batch . When one side is cooked flip the vada’s. Cook both sides till it is crispy and brown in color.

 

Spread in a towel/ tissue to soak the oil.

Arrange in a plate or any vessel. You can have this with ketchup or green chutney. .
