Many of us are making puran poli. But this boli is slightly different from puran poli.Boli with paal payasam is a very famous combination in Trivandrum ( southern kerala).For all sadyas they will serve boli first above that pour paal payasam or milk kheer. The filling is made with channa dhal and sugar and outer portion covered with maida dough. Boli is available in all most all bakeries and all sweet shops in Trivandrum. My amma is an expert in making this boli. I am following my amma’s recipe.Let us see how to make this boli.
Preparation time approx 1 hour
Ingredients for stuffing:
- 1 cup channa dhal
- 1 cup sugar. ( you can little more if you want more sweet. )
- one pinch nutmeg powder
- 1/2 tsp cardamom powder
- water to cook
For the dough:
- 1 cup maida
- 1/4 spoon turmeric powder or little yellow colour
- 1/4 cup gingelly oil
- 1/2 cup rice flour approx
Method for making stuffing:
Cook the channa dhal in enough water using pressure cooker. Do not over cook
stain the water. In a heavy botton pan add sugar and cooked channa dhal.
cook for 5 to 7 minutes until it turns thick. Do not cook for long time .If you are cooking for long time the mixtrure will dry up..Switch off the stove, add nutmeg powder and cardomom powder and mix well.
Allow it to cool .Grind this in a food processor. Make a soft dough.
Divide the mixture in to equal balls and keep.
In a bowl add maida and colour powder or turmeric powder. I have added liquid colour.
Add little water and make a smooth dough.
Pour the gingelly oil to cover the dough. keep it like that for at least 1 to 2 hours.
Divide the dough into equal parts.
Take a small portion of the dough and flatten it on your palm.
keep the channa sugar mixture in the middle and cover it .
Dust both sides with rice flour
Roll this to form a thin circle.
Heat a tawa. keep the stove on medium and put one boli. cook the boli for few seconds.
when you see the bubbles forming flip it.
Dust little ghee on both sides.
Do not cook for long time.
Take out carefuly and arrange in a plate.
